Bellwoods Brewery is a small craft brew pub and retail store in downtown Toronto. We opened our doors to the public on April 6, 2012, and have been brewing full-steam ahead ever since (actually, to be honest we direct-fire, not steam). At a relatively small production capacity of approximately 2200 hectolitres of beer a year, we’re able to exercise a lot of creative freedom, brewing up anything and everything that floats our collective boats. We encourage you to step outside your comfort zone.
In the beginning of 2013 we set a goal to amass 100 wood barrels by the end of the year, and in January 2014 we surpassed that milestone (we’re currently at about 160). Of course, we would’ve had an additional 8, had our latest shipment of rum barrels from Jamaica not been sawed open at US Customs. Apparently they posed a “National Security Risk”, so their destruction seems only fair — at least the home of the brave is still safe and sound…All this to say, barrel-aging beers is a passion and focus around these parts, and we’re constantly brainstorming new ways to make beer perfectly tart, sour, oaky, or boozy. In 2014 we released several long-term barrel-aged beers, including Motley Cru, Skeleton Key,Grandma’s Boy, Bring Out Your Dead, Lambda, and a few batches of Farmageddon. We’ve had great results with these barrels, but we’re always working to explore new methods, new barrels, and continue in our efforts to brew interesting beer.
We also favour bright hoppy styles, drawing inspiration from the citrusy, dank, piney, and pungent flavours made so popular in the American craft brewing scene. Belgium’s local culture of bottle-conditioned farmhouse and trappist styles is another point of influence, informing our approach to tradition, authenticity, and experimentation with Saisons, Dubbels, and Tripels.
Suffice to say, we brew many different kinds of beer, but never very much of any one kind. Our advice? Act swiftly, drink with purpose, and enjoy the veritable fruit bowl of our labour.
